Truthfully, my menus don't really change too much from winter to summer except that we eat more salads and quick sandwich meals. I tend to only cook all the week's meals for the first 1 or 2 days, so I don't have the oven or stove going every day. I also make a lot of ice pops and frozen type drinks. Yum!
Our change is not really a conscious one. We just tend to have a craving for more veggies and salads as the weather gets warmer. But we still have some pretty hearty meals during the summer.
The Kraft magazine? My mother-in-law gives me hers after she's done with it. :)
Also, I agree with amiyrah about cooking several meals a day at the beginning of the week. I try to cook that way all year 'round. Saves on utilities and frees up time later in the week.

Winter meals are more.. shepards pie, homemade mac and cheese, "shake and bake" chicken, oven roasters, beef stew in the crockpot, pot roasts
In the summer we tend to do steaks on the grill, and the left over steak goes in sandwich wraps for the next nights dinner with veggies, cheese and salad dressings.. Hamburgers, hot dogs, tacos.. things seem to be quicker in the summer...
