Baked "Fried" Chicken

Learning to cook healthier for myself but in ways my family will also like is not easy.

This chicken recipe is one we all agreed we liked.

2/3 c instant potatoe flakes
1/3 c parmesan cheese
1 tsp garlic pepper or garlic powder
1 stick margarine, melted
3 pounds of boneless skinless chicken breast


Heat oven to 375.
Spray cookie sheet with baking spray.
Melt margarine in bowl.
In another bowl, combine potato flakes, parmesan cheese and garlic.
Dip chicken in margarine and roll in potate flakes.
Bake 30-45 minutes until chicken is done.


I like to turn the oven to high broil the last couple minutes to brown the chicken real good.

The fat content has to be pretty low with no skin and no frying in grease, don't you think? Is there any dieticians out there?

I like to serve this with grilled asparagus and/or honey glazed carrots.

Art of the Chicken Coop Review

Keeping a small flock of backyard chickens is becoming more and more popular.

In Art of the Chicken Coop there are easy to follow construction plans for seven different coops, four of them for flocks of six chickens or less. The perfect size for a backyard flock. One coop is a space saver, only using 2 ½ x 3 feet of space! Each coop includes a complete supply list and lots of pictures!

If you will be keeping over six, up to fifteen, three of the coop designs will accommodate such a flock. The author also includes instructions on how to increase the size of any of the coops in the book.

What I really liked was the use of salvaged materials. Both my coops used salvaged materials. I’m sure my new coop will be no different.

There are also 3 profiles of chicken keepers who offer some great advice and tips, a whole chapter on building coop runs, advice on everything you’ll need in your coop, a characteristic chart of popular backyard breeds (with each breed pictured), and egg recipes.

From beginner to veteran this book has great information for anyone!

Zucchini Candy-In honor of National Sneak Zucchini On Your Neighbor's Porch

National Sneak Some Zucchini Onto Your Neighbor's Porch Day is today!  Have any of you dropped any off on your neighbors?
It always happens.  The zucchini that hides until it is soooo huge!  I've had a couple of them so far this year.  How about you?  What do you do with your bat size zucchinis?



This year I've been making candy.  That's right, zucchini candy!  I have a batch in the dehydrator right now.  They taste a lot like gummi worms. 

I have two recipes.  The one I am trying right now is one my mother gave me.  I think she found it on the internet but not sure where:

Ingredients:
A large zucchini
1 1/2 cups sugar
1 pack Kool-aid
8 cups water

Peel the zucchini.

Cut it into 1 inch chunks, be sure to cut off the center part with seeds (as uniform as you can so they dry evenly).



Add Kool-aid, water, and sugar (recipe can be doubled) in a large pot and bring to a boil.

Add zucchini chunks and turn down to a simmer,  stir occasionally. Cook until zucchini turns translucent, about 20-25 minutes. Drain using a colander.



Place them on the food dehydrator racks making sure no pieces are touching each other.  Use a fruit leather mat if you have one. This makes clean up easier. I only use mine for about the first hour then remove.



Let it dehydrate until it feels squishy but firm,  about 18 hours.

When they are done, put 3 Tbs of powdered sugar, and 1 Tbs corn starch in a bag and toss candy pieces in with it. This keeps them from sticking together in the bag or jar.

I'll let you know how we liked this recipe once it is done.

Another great recipe is:

10 cups peeled diced zucchini 1/2 inch cubes or  "worms" about 3 inches long and 1/2 inch thick and wide.
3 cups water
2 pkgs. unsweetened Koolaid (Everyone says black cherry or cherry is best, all I had was strawberry)
2 1/2 cups sugar

Peel zucchini,  dice/slice, removing seeds. Mix the liquid syrup together. Add zucchini. Bring to a boil and them simmer for 25 min. Drain. Put on dehydrator trays. Dry 14
hours at 125 degrees. Turn pieces over and dry another 4 hours. They will
feel dry and not sticky when done. Store in jars or other tightly sealed
containers. If you dip in sugar when you turn them, they will be more like
"gum drops" on the outside.


Next I will be trying these two recipes to use up large zucchini:

Zuke Chips
Take the large size zukes and slice them 1/8 inch thick, blanch them for 30 seconds, pat dry, and sprinkle salt (use Kosher or french fry seasoning) and onion powder on them. Dry them in the dehydrator until crispy like potato chips.

Zuke Burger
Take a large zuke, slice 1/2" thick, brush with olive oil, season with salt & pepper, (or any hamburger seasoning you use) and  grill.  Serve on potato roll buns.

So you still have too much zucchini and are going to sneak some on your neighbors porch, be sure to include a few of these recipes for them! lol

How To Choose The Perfect Ear Of Corn


It's the time of year when fresh corn on the cobb is available everywhere.
Local farm markets, trucks on street corners, and supermarkets.

When purchasing corn, look for tightly wrapped ears that look plump and feel full.
The corn silk should be dry but not rotting.  The more corn silk there is, the more corn kernels there will be!

Save Money And Build Your Own Rain Harvesting System

Saving money on water is one thing I'm constantly monitoring.   With the need to water pets, top off koi ponds and swimming pool, watering vegetable and flower gardens as well as laundry and bathing, our water bill can get expensive.

I've wrote about rain harvesting and using rain barrels before, but feel the subject is worth repeating and staying on top of new found ideas. 



How much rain does it take to fill my system?
Not as much as you think. It is easy to calculate how much rainwater your roof generates. The constant to remember is: 1" of rain will produce 625 gallons of runoff from a 1000 square foot roof, or 625 gallons per 1000 square feet.

iPhone Tip: Turning Off Auto Correct

I found the auto correct on my iPhone very annoying and even more annoying when I received a message from my husband that didn't make a lot of sense. (Uhhmmm, honey you really need to put your glasses on....please)

So I turned it off. It's simple, here's how:

Go to Settings,
Then to General


Scroll down and choose Keyboard


Then tap the grey button next to on beside "Auto-Correction".

That's it! Easy hugh?

No Till Garden Update

Our no till garden gets better & better and easier & easier with each year. The first year was the hardest as far as work. Getting the dirt and compost moved in and the beds set up. Last year we added two more beds. This year we have added one more so far. I want to add an additional two more this year.

Each year planting the beds established the previous years is so simple! No tilling needed! I top dress each bed with a 6-8 page layer of newspaper, 3"-4" of new compost, set the plants in (or so seed) and top with 6"-8" of straw.

The straw helps hold moisture in which conserves water and inhibits weeds from growing.


The two cantaloupe were about 3" tall and had three leaves about the size of a quarter when I planted them two weeks ago.  They have really taken off!


The two cucumbers have little more than doubled in size.  I planted what is suppose to be a gherkin cucumber.  I'm hoping that's what they turn out to be.

 Hopefully this year I will have some zucchini.  The plants are doing well and there is two small squash already.



The 8 tomato plants are looking great! Most are blooming.  I'm really excited to see how well my grape tomato plant does.  This is the first year I've ever grown a grape variety.  I hope they are sugar sweet!

Things are growing great so far.  Can't wait to start harvesting.... something.... anything.  I'm craving home grown veggies!  The watermelon is planted but nothing sprouted yet.  The asparagus is still growing and thriving, although there will be none picked this first year.  The potato plants are huge. I hope the potatoes are doing as well as the plants! And the okra has sprouted and it won't be long until it will really take off.

The great thing about a no till garden other than we didn't have to till last fall or this spring is that I haven't had to do any weeding yet.  The heavy straw mulch keeps it to a bare minimum.

I'm insurance poor!

In just the last three years we have went from paying $200 a month for health, auto and home insurance to $500 for all three which now have higher deductibles on the car and health.

Shopping for insurance is a pain! Trying to compare apples to apples is near impossible.

Can You Identify This Flower

A friend of my father recently went to work for a greenhouse and has brought home my mother and I several flowers that were to be thrown away.  I love FREE flowers!

I was able to identify all of them but this one....


They smell so good!


If anyone can help me out I would appreciate. I can then look them up to see how to care for them.

So fresh they hadn't even totally uncurled!


A "true" morel will be hollow.


When sliced length-wise, it is hollow from top to bottom and one piece.  There is NO cap on a stem.  False morels will have a cap that sits on the stem.

Today we found a total of 52 morels.  Our knife we took wasn't sharp enough and some pulled away from the ground when trying to cut them.  It's a good idea to cut about 1" up from the ground. This will leave spores to produce more in the future.  We left small (smaller than your thumb) ones as well as a few dried up ones for the same reason. 

I really enjoyed being outdoors with hubby and my son, teaching my son how to forage correctly for morels.  Now I just have to convince him to eat them!
