The Original Campbells Tomato Soup Cake

During the great depression cooks cooked with what was readily available. There a many variations of this recipe on the internet. It's a "pantry" recipe meaning that all ingredients are normally found in a cooks pantry. Try serving the cake BEFORE letting family and friends know it has tomato soup in it. Once they try the spicy cake the idea of the tomato soup will be accepted more. ;)

This version comes from my cookbook "A Campbell Cookbook, Cooking with Soup".

1/2 cup shortening.
1 1/3 cup sugar.
1 can tomato soup, undiluted.
1 tsp baking soda.
2 cups flour.
4 tsp baking powder.
1 tsp cinnamon.
1/2 tsp cloves.
1 1/2 tsp allspice.
2 eggs.
1/4 cup water.

Preheat oven to 350 F. Generously grease and flour 13x9 pan.
Measure all dry ingredients into mixing bowl. Add soup and shortening. Beat at low to medium for 2 minutes. Add eggs and water. Beat two more minutes. Pour into pan and bake 35 to 40 minutes. Let stand in pan for 10 minutes, remove and cool on rack. Frost with cream cheese frosting.

Cream Cheese Frosting
Blend 2 3 oz packages softened cream cheese with 1 tablespoon milk. Gradually add 1 16oz box sifted confectioners sugar; blend well. Mix in 1/2 teaspoon vanilla. extract.

NOTE: I like to add 1 cup chopped walnuts to this spicy cake. YUMMMY!

Overnight Oven French Toast

This is an easy breakfast to prepare the night before any holiday to free up holiday mornings. I will be serving this to my family Easter morning.

Overnight French Toast with Toasted Pecans and Maple Syrup

16 slices of french bread (1 inch thick)
4 eggs
1 12oz can evaporated milk
1 tsp vanilla
1/2 tsp ground nutmeg
1/4 tsp cinnamon
1/3 cup brown sugar
1/2 cup water

1/4 cup brown sugar for topping
1/2 cup chopped pecans

Maple syrup

Lightly grease 13x9 baking pan. Line the pan with the bread. Squish them in.

Whisk together first set of ingredients. Pour over bread. Sprinkle 1/4 cup brown sugar evenly over bread. Cover and regrigerate overnight.

Next morning, toast pecans 8-10 minutes in shallow baking pan in preheated oven at 400 degrees. Remove and let cool while baking toast for 25 minutes.

Top cooked toast with pecans and maple syrup. Serves 8

Maple Syrup:
4 cups white sugar
1/2 cup brown sugar
2 cups water
2 teaspoons maple extract

Mix water and sugars together. Simmer 15 minutes. Remove from heat and add maple extract. (or vanilla can be used)

Freezing Eggs, Butter, Milk, Sour Cream, Cheese

Just about anything can be frozen. So when you run across those wonderful sales and have a coupon for them, don't be afraid to stock up if you have the room in your freezer.

If I ever have a question if I can freeze a certain something I always check out National Center for Home Food Preservation first. I feel comfortable with trusting this site and their information. Check it out, it will save you tons of money!

Freezing milk has been done by our elders for years. A lot of elderly people shop once a month, buying enough milk for the month. They will then pour into plastic containers just the right size for their use for a week at a time. The whole milk will separate when thawed (always thaw in refrigerator) and must be shook quite a bit once thawed.

Now there are things on the NCFHFP list that says it's not a good idea to freeze or you have to do something to it beforehand such as butter. I dont do anything with my stick butter that I use for baking other than throw it in the freezer. I pull a stick out of the box when needed. It's just fine.

Cream cheese: I also just throw it in the freezer. We only use cream cheese mixed with other stuff for dips and casseroles and once its thawed and stirred, it's just fine.

Shredded Cheese: goes into my freezer just as it is, unopened. Once thawed, it's fine.

Sour Cream: Here's my experiences. If it's mixed in with something and cooked then frozen, it's fine. If you freeze it, thaw it and then use it for baking cookies, cakes, cupcakes... it will be fine after stirring well and adding to the rest of your ingredients. It's not all that good to freeze, thaw and then put on a baked potatoe or used for a cold dip. It's the texture that changes really, not that freezing makes it go bad. I also have had better success with one brand than others. So try freezing just one of your brands and see what you think. There are so many different brands and a lot are just local. So what works for one of us may not for others. Also, one of my favorite tips from Amiyrah at Four Hats is to always store your sour cream and cottage cheese upside down in your refrig. Don't ask me why, but it will last forever (way past exp. date) that way.

Cottage cheese: I have no problems freezing cottage cheese if it's already cooked in a casserole such as lasagna. We don't like cottage cheese frozen, thawed and then consumed alone. The texture changes and I think the taste changes somewhat also.

My main point is this- Freezing will not make anything go bad. It may change textures and sometimes taste. What will be the deciding factor for you is how you plan to consume the frozen item once thawed. If you are ever in doubt, try freezing a just one of whatever, thaw it, and decide for yourself.

Heck, I've even been told a lot of people freeze Crescent rolls right in the can, just throwing them in the freezer. I froze some, but had removed them from the can, still rolled up and dropped them in a freezer bag. When thawed and cooked for a casserole, they tasted fine to us!

Spring Flowers~ Cupcakes

Spring is here and flowers are popping up everywhere... even in my kitchen. :)

I seen these cute Flower Power cupcakes over at Grannies Kitchen and had to make some. The total time on the recipe is over 4 hours and I decided to do mine a little different. I needed something fun to do to relax after working hard all day but didnt have 4 hours.

After baking up a quick batch of cupcakes, all I did was cut my large marshmallows using scissors into 5 pieces. It was really cool how when you cut them the scissors pretty much shaped each petal.
I took another large mallow and cut it into slivers. I rolled a sliver to make the center of the flower (cause I didnt have small mallows).
Next I colored my sugar and decorated! Very easy and fun.

Make Your Own All Natural Green Household Cleaners


I've received several emails requesting more homemade household cleaners. Here's what I printed off and put in my Household Planner for easy reference. I hope this helps and be sure to leave your favorite homemade cleaner in comments.

All Natural Household Cleaning Solutions

Save time and money by trying these simple household cleaners!

Window Cleaner
Mix 1 tablespoon of cornstarch with 1 quart warm water.

Floor Cleaner
Mix 1 cup vinegar with 2 gallons water.

Glass Coffee Pot Cleaner
Place crushed ice, salt and sliced lemons in pot and swirl till clean.

Furniture polish
Mix 1/4 cup vinegar with 3/4 cup oil (olive, vegetable, lemon).

Brass, Copper, and Pewter Cleaner
Mix equal parts salt and vinegar, then thicken with flour.

General Cleaner
Mix 4 tablespoons baking soda in 1 quart warm water, or use plain baking soda with a wet sponge.

Disinfecting/Deodorizing Cleaner
Mix 1/2 cup Borax in 1 gallon hot water.

Mildew Remover
Mix 3/4 cup chlorine bleach in 1 gallon of cold water.

Telephone Cleaner
Clean with rubbing alcohol.

Eyeglass Cleaner
Mix 8 ounces of ammonia with 32 ounces of rubbing alcohol.

Daily Shower Cleaner
1 cup vinegar, 1/2 teaspoon liquid dishwashing soap, and 1/4 cup dishwasher rinse agent.

Oven Cleaner
Baking Soda and Vinegar.

Drain Cleaner
Add 1/2 cup baking soda, then pour one cup of vinegar down drain. Let sit for 20 minutes, then flush with water.

Woodwork Cleaner
Used cold tea for cleaning any kind of woodwork.

Dusting
Re-use dryer sheets for dusting instead of the new Pledge or Swiffer cloths.

Toilet Bowl Cleaner
Drop denture cleaning tablet into bowl and let sit.

Carpet Deodorizer
Sprinkle baking soda or cornstarch on carpet. Vacuum after 30 minutes.

Aluminum Cleaner
Mix 2 tablespoons cream of tartar with 1 quart hot water.

Tub and Tile Cleaner
Mix 1/4 cup baking soda with 1/2 cup white vinegar.


Try some of these all natural solutions next time you clean. They are made with products that you probably have on hand, and they are safe to use. I hope that they work as well for you as they have for me!

Window cleaner:
1/4 cup Rubbing Alcohol
1/2 cup Vinegar
1 1/4 cups water

Place in a 16 oz spray bottle.
For streak free mirrors and windows, use newspapers to wipe.

Make your own Homemade Taco Sauce & Seasoning

When making enough burritos and tacos for a family of four or larger it gets expensive to buy everything needed. The meat and cheese alone is expensive.

So to make it more frugal, when I dont have these items stockpiled (from purchases using coupons to get them really cheap or free) I make my own. Making these two things from scratch shaves $4-$5 off the price of this dinner by itself.

Taco Sauce
1 small can tomato sauce
1 teaspoon ground cumin
1/4 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 teaspoon Worcestershire sauce
1/4 teaspoon ground Cayenne pepper
1/2 teaspoon sugar

Mix all together and let sit for at least 30 minutes so spices wed.



Taco Seasoning
6 teaspoons chili powder
5 teaspoons paprika
4 1/2 teaspoons cumin
3 teaspoons onion powder
2 1/2 teaspoons garlic powder
1/8 teaspoon cayenne pepper

Use 2 heaping tablespoons to equal one commercial packet.

When my oldest son and any of his friends are here for dinner, I will stretch the hamburger by adding 1 cup of cooked minute rice.

Recession Buster Blasts #20- Resources for Coupons

One of the most helpful things in becoming a frugal grocery shopper is knowing where to look for and get coupons.

When I decided to become a coupon clipper like other people I had read about and seen on tv I knew a couple of resources. Since then I have learned so much more. Here is a list of resources for coupons I utilize.

1) The Sunday newspaper. You will find coupon inserts in the large metropolitan paper closest to you. Some areas even have "Early Edition" Sunday papers that hit the stands on Saturdays. Sometimes the coupons in the early editions will be different from the paper that comes out on Sunday also. Check your papers!

There are sites that preview the coupons that will be coming out a few days before hand also! Try Coupon Clippers. There may be a coupon or two that will vary. (it always seems to be one I want too! lol)

2) Printables. Coupons can now be printed off the internet at a bunch of different websites. A couple of my favorites are: Coupon Loop and Smart Source Super Pages.

Also check out my sidebar for the Wal-Mart Printables Match Up. These printables can be used anywhere, not just Wal-Mart. (to see the widget full size, scroll down to my Categories and click on Wal-Mart) There are three different lists in this widget. List A, B, and Singles. These are the top 3 places to print coupons.

The printable coupons on most websites have a limit of how many times a coupon can be printed in a certain time frame. They are updated usually once a month with new coupons. Some of the sites will even email you when they have updated and added new coupons to the database.

3) Tearpads. This is the little note pad type books of coupons you see hanging through out stores. They normally will hang on the shelf by the product or on a display in the isle. Most of the time they can be redeemed at ANY store that accepts manufacturer coupons, not just the store where you receive them.

4) Peelies. Peelies will be found directly on the product. They are the little peel off sticker coupons. They are desgned to be redeemed right then at the time of purchase. I always check the expiration date on them and if it's for a later date than the coupon I already have in hand, then the peelie does not get redeemed then.

5) Magazines. Many magazines have advertisements paid for by the manufacturer that will include a clippable coupon. The best magazine for coupons consistently is ALL YOU. You can purchase a subscription or it may be picked up at Wal-Mart. Wal-Mart is the only store that carries this mag.

6) Blinkies. This is the little dispensing machines with the blinking light you see hanging off the shelves in stores. If it's a product that I really like and buy often, I will get at least half a dozen coupons, especially if the expiration date is decent!

7) Booklets. These are information books or brochures manufacturers print up to inform us, the consumer, about their product. To get you to try the product, they often will include coupons and rebates in the books, brochures or pamphlets. The expiration date on these are usually 6 months to a year due to the cost of printing the material up and printing of mass quantities. Look for them at your pharmacy, doctor's office, dentist office, and vet's office.

8) Home Mailers. Be sure to check your junk mail for rebates and coupons. It was reported last week that one of the national tv survey companies had enclosed $5 bills with their surveys. If I remember right it was the Neilsen TV Ratings.

9) Hang Tags. These are tags found hanging around the neck of a bottle. I have found hang tags on ketchup, mustard, salad dressing and shampoo. I've heard that the latest is hang tags on wine bottles. I've not been fortunate enough to find those.... yet!

10) Inside or on product packaging. Be sure to check your pet food bags, frozen foods, etc. I have even found them on the reverse side of labels off canned food.

Recession Buster Blasts #18-Crescent Roll Sausage Pie

1 8oz can Crescent Rolls (or you can make your own dough...RECIPE)
1 8oz package Sausage Links (cooked or you can use brown & serve) (ham can be used)
1 cup spinach (can use broccoli instead)
2 cups shredded Monterey Jack cheese
4 eggs lightly beaten
3/4 cup milk
2 Tbl chopped green pepper
1/4 tsp oregano
salt & pepper to taste

Separate crescent dough into 2 large rectangles. Place in ungreased deep dish pie pan, pressing over bottom and half way up sides to form crust.

Seal perforations. Slice cooked sausage and arrange in bottom. Sprinkle cheese on sausage. Combine remaining ingredients and pour over cheese.

Bake at 400 degrees for 20-25 minutes until golden brown.

Serves 6

Recession Buster Blasts #17-Kraut & Sausage Skillet

16 ounces smoked sausage or beef Polish sausage
32 ounces Polish-style sauerkraut, undrained
3-4 medium potatoes, cut into 1/2-inch cubes (unpeeled is great)
1 large jalapeno pepper, chopped

Cook sausage in large skillet over medium-high heat approx 7-8 minutes. Add jalapeno for last two minutes. Slice sausage on diagonal into 1-inch chunks.

Add sauerkraut and cubed potatoes; bring to a boil. Cover; reduce heat and simmer 30 minutes or until potatoes are tender.

Recession Buster Blasts #16-Homemade Croutons

Don't throw out that dry stale bread! No matter what kind it is, it will make wonderful croutons for your soups and salads!

3 Tbl. olive oil
1/2 tsp. garlic powder
1/2 tsp. dried thyme
1/4 tsp ground black pepper
2 cups any bread, 1/2" cubes

Preheat oven to 325 degrees.

In large frying pan, combine all but bread. Heat over medium heat until hot. Remove from heat, add bread cubes and toss to coat.

Turn out onto a baking sheet and bake for 15 minutes or until they just start to turn brown. Flip/stir a couple times during baking process.
