Shopping Slump... No Procter & Gamble AGAIN?
I must be in a slump. For the last three weeks there havn't been any inserts that really excite me. Or maybe it's because the economy is in a slump?
I've been shopping less and using more from my personal Mini Store in my freezers and pantry. I love the prices of these items. I don't get a lot for FREE, but .30 Ragu, .25 bags/boxes of pasta, .25 boxes of tea, .50 bags of sugar, .50 packages of cheese, .50 bags of chips, etc. really helps me save money so I CAN afford to buy MORE meat and vegetables/fruits for a healthier menu for my family.

Honey-Citrus Dressing
This is a fun way to add some variety to your fruits and melons!
1/3 cup frozen lemonade or limeade concentrate (thawed)
1/4 cup honey
2 tablespoons vegetable oil
dash of ground mace
dash of salt
Combine and beat all until smooth. Cover and chill well. Serve over melon balls or mixed fresh fruits and berries.
Cantaloupe was on sale for .89 a piece this week. Makes a quick & frugal dessert without heating up your kitchen too.

Homemade Dill Dressing
How is your dill growing?
Here is a quick & easy dressing for salads or try drizzling over those home grown tomatoes! Yum!
1 cup real mayonnaise
1 teaspoon lemon juice or vinegar
1 teaspoon dried crushed dill weed
1/2 teaspoon minced onion
Ground pepper to taste
1-2 tablespoons milk to thin to desired consistency.
Stir together mayonnaise, lemon juice or vinegar, dill weed, onion, and pepper to well blended. Thin with milk to desired consistency. Cover and chill.
Serve over lettuce wedges or tomatoes.
For a healthier version use plain yogurt (drained) instead of the mayonnaise.

Can Your Own Pickles: 48 Hour Sour Pickles
There is no greater satisfaction than growing your own food and learning how to preserve it. You know exactly what your family is eating and how it was grown and prepared. Last year our cucumbers did pretty well. This year there will be none if I dont get my butt out to the garden and get them seeds poked into the ground!
Here's a recipe I found in my aunts recipe collection that I want to try. My uncle says my aunt used it several times when their cucumbers were abundant.
32 3-5 inch long cucumbers
1 cup salt
4 quarts water
4 cups vinegar
1 cup sugar
1/2 tablespoon whole cloves
1/2 tablespoon celery seed
1/2 tablespoon peppercorns
Wash cucumbers and place in a large clean crock or enamelware kettle. Dissolve salt in the water and pour over cucumbers. Place cover over the crock/kettle. Let stand 24 hours, then drain off.
Cover with fresh cold water and let sit 20 minutes. Drain. If rinse water is too salty, repeat. Meanwhile combine vinegar, sugar and spices tied in a bag, bring to boil and boil 5 minutes. Remove from heat. Once cucumbers are drained, wash kettle/crock thoroughly. Cut cucumbers lengthwise in halves or quarters and place back into kettle/crock. Bring vinegar/sugar solution back to a boil. Remove spice bag and pour boiling hot syrup over cucumbers. Cover kettle/crock and let stand 24 hours.
After 24 hours, remove cucumbers. Bring syrup back to a boil while heating 8 pint jars. Fill hot jars with upright cucumbers. Pour syrup over leaving 1/2 inch of headroom. Top jars and process 10 minutes in a water bath. Remove jars.
To make a sweet pickle increase the sugar in the syrup to 3 cups.

Homemade Avocado Dressing
Being frugal means a lot of different things to each individual. One way I like to be frugal is making my own mixed seasonings, cleaners, and of course dressings & dips. Here's another one of my favorite recipes for those summer veggies that are so abundant at farmers markets and from my own garden. Enjoy!
1 cup real mayonnaise
1 ripe medium avocado, cut in chunks
1 tablespoon lemon juice
1 tablespoon chopped green chilies
1/2 teaspoon sugar
1/2 teaspoon salt
Dash of hot pepper sauce
1 clove garlic
4 to 6 tablespoons milk
Process all ingredients except milk until smooth. Thin with milk to desired consistency. Cover and chill for at least 1 hour before serving. Makes 2 cups.
Serve over sliced/diced tomatoes or raw vegetables.

Today is National Doughnut Day
Why not make your own doughnuts today instead of buying into the consumer gimmick?
Doughnuts come in all sizes, shapes and flavors. They can be fried or baked. You can make them very fancy using your expensive doughnut pan, or make them like your grandma did... simple, quick and with a rustic touch.
Here's a few recipes for quick & easy doughnuts to make with your children today. They will have a ball making them.
Tube Biscuit Doughnuts
Remove from tube.
Pat each biscuit out just a bit.
Using a cap from 2ltr bottle of pop; cut a hole in the center.
Heat oil in a deep fryer, a Fry Daddy, or a skillet until a drop of water sizzles in the pan.
Using a fork, carefully lower each doughnut into hot grease. Be sure to do the donut "holes" also. When they are golden brown, turn and brown on the other side.
Drain on a paper towel for a couple minutes.
You can shake them gently in a brown paper bag with about 1/2 cup sugar and cinnamon. OR you can mix up powdered sugar, milk and vanilla to glaze them. Try even spreading your childs favorite jelly/jam on them.
Dipped Bread Doughnuts
Mix up 1 cup of pancake mix per directions.
Take 3 slices of bread and remove crust. Cut from corner to corner, making 4 triangles.
Dip each triangle in pancake batter and then fry in oil until golden brown. Drain.
Sift powder sugar over top.
Spread with jam/jelly is also yummy.
Best eaten warm.
You can also make doughnuts from cake mix, pancake mix, and of course from scratch.
