Have you met Pillsbury's Big & Buttery?

The other day when I went to the store I scored Pillsbury Big & Buttery Crescent rolls on clearance for .99 a can. I had a coupon for .75 off 3, so I paid .74 per can. I had never seeen these before, have you? There are only 6 in each large can, but each roll is 50% bigger than a regular crescent.

I had been wanting to fix some Ham-n-Cheese Hot Pockets with the .50 bags of Farmland Diced Ham I had scored and some of those yummy Apple Dummplings that Pioneer Woman introduced me to, but had been waiting on a sale. BINGO!

The Ham-n-Cheese Hot Pockets graced our table the other night. A picture of them is on my Monday Menu Plan post. Today I will be making the Apple Dumplings.

Here's a re-post of the recipe. I don't have any apples, so I will be using a can of apple pie filling today.

Do you love apple dumplings, but hate making them? Me too! But Pioneer Woman has posted her stolen recipe for all of us to cook up and enjoy!

It is so easy, it's illegal. ONLY 7 ingredients. ONLY 2 apples! If you want a lovely pictorial lesson in preparing these evil treats, then leave right now and go to

Here's the bare bones, no frills recipe.


Apple Dumplings

2 Granny Smith apples (I've even used a can of apple pie filling!)
2 cans crescent rolls
2 sticks butter
1 1/2 cups sugar
1 teaspoons vanilla
cinnamon
1 small can Mountain Dew

Peel and core apples. Cut apples into 8 slices each. Roll each apple slice in a crescent roll. Place in a 9 x 13 buttered pan. Melt butter, then add sugar and barely stir. Add vanilla, stir, and pour over apples. Pour Mountain Dew around the edges of the pan. Sprinkle with cinnamon and bake at 350 degrees for 40 minutes. Serve with ice cream, and spoon some of the sweet sauces from the pan over the top.

Then go to confession. Quickly.

Grandmother's Fabulous Dough


1 cup milk
3/4 cup butter or shortening
1/4 cup sugar
1 tsp salt

2 eggs
4 cups flour (measure lightly)

1 pkg dry yeast
1/4 cup warm water
1/8 tsp sugar

Heat milk, butter, 1/4 cup sugar and salt until butter melts, cool to lukewarm.

While milk & butter are heating, dissolve yeast into water and sprinkle with sugar.

Beat milk mix into yeast. Add 2 cups flour and beat for 2 minutes. Beat in eggs, then add 1 cup flour and beat 2 minutes. Beat (or use spoon) remaining flour in a little at a time until mixed well.

Turn into a greased bowl, grease top of ball of dough, cover loosely with plastic wrap, but seal the edge and place in warm area to rise. About 2 hours.

Punch down, form bread (either into loafs or rolls), place in appropriate pans, cover once again and let rise 1 hour.

Bake rolls at 375 for 8-10 minutes. Check frequently! Brush with butter to make a nice soft crust.
Bake loaves 25-30 minutes.

Just so everyone who reads my blog know where I stand politically... I am not Democratic... I am not Republican... I vote for the person who I feel will do the best job. Whether they are democrat, republican, white, or black. It doesnt really matter to me. I want the best man/woman for the job that I have to choose from.

To Annonymous who left the following comment on my blog:
Let me begin by saying that I have been following your blog for awhile and even had a link to yours on the side of my blog. After this post, this will no longer be the case. Your ignorance is amazing. If you really believe that George Bush alone is responsible for the state of the economy, then it goes to show that you must be of a rather low class. No one person is responsible for the state of the nation just as no one person will be the savior. There are a number of factors that come into play. Perhaps now that you have an abundance of free time on your hands you will be able to do some research and see why things are the way they are.

Your ignorance is also well documented based on the fact that you simply walk out on your boss. Why not express your concern and displeasure with them? Mention your loyalty and sacrifices and what not and tell them that you would have expected a little notice. The fact that you are upset that you weren't given any notice is evident, and yet, instead of being angry with your bosses, your most angry at George Bush? That is completely illogical.

2. I NEVER stated that Geo. Bush alone was responsible. I stated I was angry with him and he was number one on my list. Had George Bush not been living under a rock and would have admitted almost a year ago (referring to his news conference on Feb 28, 2008) we were headed in a recession, things wouldnt be so bad now. During this press conference he stated "I'm concerned about the economy, I don't think we're headed to recession. But no question, we're in a slowdown." At that time gas was approaching $4 a gallon for most of us and when asked about this he stated "That's interesting. I hadn't heard that. ... I know it's high now."

At this time, I chose not to follow him and discuss all the details with him due to the time of day and a couple other factors about him, that even though I'm angry with him, I will not disclose publicly here. I'm now officially unemployed. THANKS BUSH

I went to work today like any other. I work/worked for two brothers that owned two companies. First thing this am, I did payroll; for both companies. Then took care of all the payroll taxes; for both companies. Made out the transfer of money to cover payroll. Then moved onto the payables and took care of all those; once again for both companies. Once done with the payables, made out the deposits.

On Fridays I'm there by myself. The dispatcher has the day off. So in between all my regular duties I answer the phones and dispatch a couple of trucks.

At quiting time, I shut the office down and as I opened the door to leave one of the brothers said "What do you think about going on unemployment"

My response "Why?"

He replied "I just dont have any work, you'll make just as much on unemployment."

I responded "And I suppose you want this to start Monday?"

He replied "Yeah"

I responded "Thanks for the notice" and closed the door.

After 8 years of me being loyal to them, missing 4 days of work, forgoing raises for the last three years, doing more than was expected of me, working on certain things at home in my own time with out any compensation... I felt like I had been punched in the stomach.

I didnt cry until at dinner when my hubby told me he would be working again tomorow (Saturday) and Sunday since we would need the money. He also worked last Saturday and Sunday. So how many days in a row will that be for him without a day off?

I have no idea if this is temporary or permanent. I have no idea when my insurance will end. I have no idea where I'm headed right now.

But the one thing I do know is, I will survive although I'm very angry and the number one person on my list is GEORGE BUSH.

Measuring Cups & Spoons



I've had more trouble lately with baking than I care to admit. I thought for sure it was the flour I was using... so I bought a different kind.

Then my bread machine died the other day, so I thought maybe it wasnt working correctly to begin with.

Then I got to doing some cleaning and wanted to change where I keep my measuring cups & spoons. When I got them all laid out and matched back up to sets I noticed they didnt look the same size at all. So I did a test.

I took the purple 1c cup and filled it with salt, leveling it off. I then poured that into the 1c white one. It wouldnt all fit. Then I tried the green one, it was a no go too. The white one and the green one were the same but the purple one held quite a bit more! I tried the 1/2c the same way. The same thing. The white one and green one were basically the same, the purple was way bigger. I tested my spoons and found the purple were also incorrect. I have no spoons to match the white cups, but the old metal ones and green ones were the same.

I was wondering what was going on, how could a set of cups be so different? So I decided to go hunting on google and I found that I wasnt the only one who had this problem. I found Matilda of Cookbook People had done the same experiment as I had. She did a little more research than I did and she found that measuring cups & spoons are not regulated for accuracy in manufacturing.

I've not tested any of my liquid cups, but she did hers and found not all were correct either!

Now I know you are probably thinking, "Oh it wont matter!" but using cups/spoons so far off along with a bread machine that was acting up, along with flour bought two months ago that had expired 8 months ago, NO WONDER my son told me "Mom, I love you, but your bread is like bricks!" lol

I wont be forking out the money for a "calibrated" set any time soon. I'm too afraid to even find out how much they cost. I love the white set of cups because they are so easy to level off, but the green set has every size from 1 cup down to 1/4 tsp. The green spoons are ok to level but the cups with their pour lip thingy makes it hard. I've had the white set for over 20 years. I only recently bought the green set. So I guess the only ones I will throw away is the purple ones for now. Maybe one of these days I will buy one calibrated full set and throw the rest away.

At least now I have one good excuse for turning out those bricks! lol

Recipe Swap: Breakfast Casserole


Be sure to visit Sandy's Share My Recipe Sundays and The Grocery Challenge Recipe Swap to share a recipe and see everyone's recipe of the week!

24 oz frozen shredded potatoes
2 cups shredded cheese
2 cups cooked ham
salt and pepper
1 can cheddar cheese soup
2 soup cans full of milk
10 eggs

optional add ins:
chopped onion
chopped green pepper
sliced mushrooms

Combine all ingredients except cheese. Mix/beat very well. Pour into a 3 quart casserole dish. Top with cheese. Bake at 350 F for 45-55 minutes or until knife in center comes out clean.

My Breadmachine Died! in the middle of a cycle...

I was going to post my favorite bread machine recipe for all those of you who have bread machines. And then I decided I wanted to make a loaf before I posted.

And then my machine decided to die 5 minutes into the cycle. It would seem the main bearing has went out of it.

So I decided to dump the dough out, knead it, throw it in a bowl to let rise, and see what I could salvage.

But now... now this recipe is not only my favorite bread machine recipe BUT it's now my all around favorite recipe! It can be made in your machine OR by hand and turns out wonderfully!

It is different how it's put together.... this is no typo. Be sure to go against most bread machine's manufacturers recommendations and put together the bread just as typed.

1 cup warm water (110 degrees F/45 degrees C) cost: For the sake of argument .01
2 tablespoons white sugar cost: .02
1 package bread machine yeast cost: I by the jar, .47
1/4 cup vegetable oil cost: .08
3 cups bread flour cost: .49
1 teaspoon salt cost: .01

Place the water, sugar and yeast in the bread machine pan. Let the yeast dissolve and foam for 10 minutes. After the 10 minutes, add the oil, flour and salt to the yeast. Select Basic or White Bread setting and press start.

Now when my machine's beater started to whip around it made a couple of passes and then nothing.

I dumped all out of the pan into a bowl and started mixing and kneading with my hands, just folding it over and over. I did this about 50 times. Oiled the top of the ball, flipped over and oiled the bottom of the ball and flipped it back over. I placed saran wrap over the bowl and let rise for about 1 1/2 hours. I then punched the dough down, pinched off walnut size pieces, shaped into balls with smooth tops and dropped two balls into each buttered muffin tin. I covered the tins once again, let them rise for approximately 1 hour, threw them in a 375 degree oven for 11 minutes and this was the best dinner rolls I've ever made!

The total cost for this recipe was $1.08. It made 12 dinner rolls and 1 1 pound loaf of bread. It would make approximately 1 2 pound loaf of bread.

Rebates are like FREE money to me. I'm usually only collecting upc codes for one or two rebates at a time before I can put it all together and mail it off.


Well this last month I found myself swimming in receipts and upc codes for several rebates. A couple of the rebates I wanted to submit two or three times. I had my receipts in a bag and my upc codes in a bag. When I went to put them together I realized one of my stores' receipts only listed the description and no upc code. I tried matching them up, but some of the clipped upc codes only had their numbers and no description.

I was pondering what to do. If you have ever submitted rebates you know that if you dont send in the right upc code, your rebate will be rejected.

The Pepsi rebate is what was kicking my butt. You were required to submit 3 upc codes from any 9oz or larger Lays chips. I had all these upc codes from chips but didnt know which were which.

Then I remembered a friend that has done rebates for a long time had mentioned to me last year (when she was trying to get me to start rebating) that there was a site on the internet where you could look the upc codes up!

I found it and boy did it save my butt and two of my pepsi rebates! I now have all my receipts matched up to all those bags of chips that were consumed during the Superbowl! I'll be dropping them in the mail today.

If you need to look up an upc code, here it is. It's FREE and simple. You type in all the numbers including the little one to the left and right, hit submit, and it will bring up the product!

Freebies: Another Cookbook

I'm An Organizing Junkie's monthly organizing roundup for the month of February is recipes.

One of her posts for the month is about purging her cookbooks and encouraged us to do the same. Be sure to read her post.

I have many cookbooks. The ones that I use often I keep in my kitchen.


Others that I bought or received as gifts that I dont use are kept in our office with my other books. My goal is to go through them and purge as many as I can. I will never get rid of the majority of my cookbooks though. I like looking at them; they give me inspiration. Purging of things I love and collect is hard for me. It overwhelms me. So I need a game plan to get this done. Unclutterer has a step by step post that sounds like will help me stay focused on the project, and let loose of those that need to go.

All my "loose" recipes are filed in a 4x6 photo box.
Another of my goals this month is to re-do my dividers. This will be no big deal for me and will be fun in the process.

Mexican Rice

We love mexican food and the guys are crazy about mexican rice. A couple of weeks ago my son asked me to figure out how to make it when I have burrito night. There seems to be a lot of different opinions about what to put in it, but one thing everyone agrees on is how to cook the rice. Here’s the version I came up with.

Ingredients
2 cups of long grain white rice
2 15 oz cans of chicken broth
1 cup of canned diced tomatoes, pureed or salsa
1 small onion, chopped
1 small can of green chilies, chopped
1/2 tsp. garlic powder
2 tbsp vegetable oil

Directions
Place oil & rice in a pot over medium heat. Stir the rice until it starts to brown a bit (10 minutes). Sauté the onions & chilies for a few minutes with the rice. Once everything is sautéed, slowly add the tomato puree, garlic powder, and both cans of broth. Bring to a boil, then cover and cook over low heat for 20-25 minutes. Let stand 5 minutes before serving.

When I have it made, I use a cup of my homemade salsa and omit the tomatoes, onion, chilies, and garlic since the salsa already has this in it.

Frugal Dinners from Kraft Mac & Cheese



If you've got 15 minutes, you've got dinner!

5 different dinners.

Dress up that mac & cheese.

Some call it Semi-homemade, I call it EASY!

Prepare 1 box of Macaroni & Cheese. Choose your add ins!




1 cup meat.....1 cup Vegetables............Extras
grnd beef.......stewd tomatoes........1 t. chili powder
chicken.............broccoli.....................2 t. mustard
ham................red pepper.........1/4 c. Miracle Whip
tuna..................peas...........1/4 t. Italian Seasoning
grnd beef........peas & carrots...........1/8 t. pepper

My son and I's favorite is the tuna added in. I only wish I could get hubby to eat this. We usually have it when hubby isnt going to be home for supper. :(
