Recipe Swap: Breakfast Casserole

24 oz frozen shredded potatoes
2 cups shredded cheese
2 cups cooked ham
salt and pepper
1 can cheddar cheese soup
2 soup cans full of milk
10 eggs
optional add ins:
chopped onion
chopped green pepper
sliced mushrooms
Combine all ingredients except cheese. Mix/beat very well. Pour into a 3 quart casserole dish. Top with cheese. Bake at 350 F for 45-55 minutes or until knife in center comes out clean.
