These cookies can be made with several different variations that I will list after the basic recipe.
1 lemon cake mix
2 cups whipped topping
2 eggs
powdered sugar
Mix together cake mix, whipped topping and eggs. Be sure to not over mix. Refrigerate 2 hours or longer. Can be refrigerated a day ahead of baking.
Preheat oven to 325 degrees.
Lightly grease a cookie sheet. Roll cookie dough into small balls, dip tops of balls into powdered sugar and space evenly on cookie sheet, sugared top up.
Bake 6-8 minutes. Do not overbake. You want the edge barely brown. Remove from pan and cool.
Variations:
add 1 tsp lemon extract
add 1 package lemonade flavored kool-aid
add 1 tblsp lemon juice
add 2 tsp lemon zest
We call these Lemon Snowflakes. They are so good! I once won a baking contest at my (then) workplace with them, and just laughed to myself at the short ingredients list. :)
ReplyDeleteLisa,
ReplyDeleteThese sound delicious! I can't wait to make them!
I put the final post of the Road to Early Retirement up today. Now I have to get ready for my vacation.
