What to do with all these chocolate chips!

I have several bags of chocolate chips that was bought when they are on sale, and I had coupons. I paid .50 a bag for them. Today I was going to bake some Chocolate Chip Pan Cookies but never got around to it. Hubby had to work all day so I had to do all the outside chores. Boy wonder had a friend spend the night last night and they kept me busy most of the day. So tomorow I will get them baked. Here's the recipe I use.

Chocolate Chip Pan Cookies
2 1/4 c flour
1 tsp baking soda
1 tsp salt
1 c butter, softened
3/4 c sugar
3/4 c packed brown sugar
1 tsp vanilla
2 eggs
1 12oz pkg semisweet chocolate chips

Preheat oven to 375.

Combine flour, baking soda and salt; Beat sugar, brown sugar and vanilla with butter until creamy. Beat in eggs. Gradually add flour mixture. Stir in chocolate chips. Spread into greased 9x13 pan. Bake 20-25 minutes. Cool. Cut into 2" squares. Makes 35 squares.

When I made these Sunday, I used 2 2/3c flour and added 1 cup sour cream and they were delicious!

  2. I have to try this one! Also, if you have too many bags, you can make your own cream-frosting for any cake. Take 3 eggs, beat with 3 cups of sugar and then add 3 tbl spoons of flour. Heat up 3 cups of milk until it's simmers but not overboil and toss one bag of chocolate chips (I use Ghirardelli). Add one cup of hot milk to the egg mixture and mix it well - this prevents it from being chocolate scrambled eggs. Then pour mixture slowly into the remaining hot milk but wisk constantly or it will be lumpy and will stick to the bottom. Keep wisking for few minutes until you see it thiken up. Take off the stove and add 1/2 stick of ice cold butter in small chunks to emulsify it. Add one teaspoon of vanila to taste. Let it cool and slather it up on the cake - enjoy!
