Easy Spicy Oven Roasted Frugal Chicken Legs

It seems chicken is always on sale. I have a hard time figuring out what to do with chicken legs that are on sale all the time around here. I hate to fry chicken! It is so messy and my breading never stays on and, well I could go on and on, but the point is I dont fry chicken. This week they are on for .99 a pound.

I found this Spicy Oven Roasted Chicken Leg recipe over on Pioneer Woman Cooks. To me its easy, quick, and frugal. Tomorrow I will be picking up a bag of those chicken legs. I already have everything else including that Hot Salt I need to use up.


  1. If you don't like to fry them (I love to and finally got it down pat) you can oven fry them which tastes really good and it alot cleaner. Dry the legs, dip them in an egg wash and roll them in seasoned bread crumbs(put in any herbs and seasonings you want) and bake them at 375 for 40 minutes. Tastes yummy and is less fattening.
    I also throw them in the crock pot with some stock or broth, let them cook on low for 6 hours and serve them over rice with a side of veggies. mmmmm...I think that might be on my menu for next week lol.

  4. Yum! I am crazy about The Pioneer Woman's recipes! I made her cinnamon rolls yesterday & they were heaven!

    I haven't tried these yet, but I think I will next week!

  5. I cooked these this afternoon. They were good, but I forgot to sprinkle them with more seasoning after dipping them and placing on pan.

    I sprinkled more of the hot salt on after they were done. They still werent quite hot/spicy enough for us. Next time I will double the amount of hot salt or maybe just add some plain ceyenne along with the hot salt.

    Otherwise, my hubby doesnt usually like chicken legs and told me he really like these. It was the butter and lemon he said he liked and to kick it up a notch on the spice next time.

    That's a thumbs up from hubby and that makes me happy.
