Buying frozen pancakes seems silly to me. I make my own and freeze them. It's really simple.
Cook your pancakes like you normally would. Lay your cooked pancakes out on a cookie sheet lined with wax paper in a single layer to cool.
Once the pancakes are totally cool, I stack them with a piece of wax paper in between each, then place them in a plastic bag. I've used saved cereal bags, bread wrappers as well as ziplock freezer bags.
Then in the mornings before school, I can quickly pull out as many as I need and microwave them for a healthy quick breakfast for my son.

When I make pancakes for all of us on the weekends, I invariably have left over batter. I go ahead and cook it into pancakes, let them cool, wrap, bag 'em and then throw in freezer. This way I am replenishing my supply all the time and I don't have to have a big Pancake Making Day very often!

I do the same thing with pancakes. I also make waffles and breakfast burritos to freeze. Once in a while I make breakfast biscuits or homemade bagels ahead of time. I don't limit us just traditional breakfast foods, either. A made-ahead bean burrito is just as good for breakfast as an egg burrito.
ReplyDeleteThis morning I let Kat have cookie bars. I made them myself with whole wheat flour, peanut butter, and rolled oats, so I'm sure they can't be any worse for her (and probably better) than a granola bar, toaster tart or sugary cereal.

We do the same thing here as well. We also make our own syrup too...it's a very similar recipe to yours, but no butter so better for vegan/vegetarians lol.
