Recession Buster Blasts #15-Hot Fudge Sunday Cake

1 c flour
2 Tbl. cocoa
1/4 t. salt
2 Tbl. vegetable oil
3/4 c. sugar
2 t. baking powder
1/2 c. milk
1 t. vanilla

Mix well and pour into a buttered 9x9 pan.

Sprinkle 1 c. brown sugar and 1/4 c. cocoa on top of batter.

Pour 1 1/3 c. very hot water over batter. This will make the sauce.

Bake 40 minutes in a 350 degree oven until top is dry.

Serve warm with vanilla bean ice cream. Spoon sauce from pan over cake and ice cream.

This cake is a hit around my house. My mother has been serving it ever since I was a little girl. It wasn't until recently that I figured out why. It's so simple, uses no eggs and everything is basic pantry ingredients.

  1. Oh, yum!! We call it Chocolate Pudding Cake.

    There is a lemon version, too, but the recipe is hard to find. I might have it in my bookmarks somewhere...I should look to see if I do.

  2. Annie I've had the Chocolate Pudding Cake also. It's just as yummy. For the most part they are the same with a few minor differences. Does your pudding cake call for chocolate chips or bakers chocolate? Most of the ones I've seen call for chocolate other than cocoa. The main important thing that stays the same throughout all the different recipes is the pouring of the very hot/boiling water over all. That's what makes the yummy pudding
